Because participants of my port workshops are always so enthousiastic about the taste of this cheese, it can now be ordered online: a very special cheese of 300 grams that matches extremely well with different kinds of tawny port (tawny reserve and colheita) and with old vintage port. It is a cheese from a monastry in the Périgord made out of pasteurised cow's milk, refined with walnot liqueur and 3 weeks of ripening. It was produced in the monastry 'Timadeuc': hence the name.
The cheese has a creamy, nutty flavour.
We tasted Timanoix earlier with Niepoort Colheita 1999 and Niepoort Vintage port 1985: very good!
